Probiotic Strawberry Crumble Bars

This healthy dessert recipe for strawberry crumble bars can be made gluten-free, dairy-free, and vegan. These strawberry crumble bars are made with real fruit and no refined sugar.

I love baking, but too much sugar can upset my gut health. That is where Just Thrive Probiotic comes in!

I snuck a few capsules into these strawberry crumble bars that I think are healthy enough to be a grab and go breakfast bar, or go ahead and top the bars with your favorite ice cream for a treat!

I whipped up a batch of homemade strawberry jam in under 10 minutes to reduce the amount of sweeteners, but feel free to use your favorite jam on hand.

Building The Perfect Probiotic Strawberry Crumble Bars:

Ingredients:

Strawberry Jam:

📍  2 cups fresh or frozen strawberries

📍  1/2 lemon juiced

📍  1 tablespoon honey or maple syrup

📍  1 tablespoon arrowroot powder

Crumble:

📍  1 cup gluten-free oats

📍  1 cup almond flour

📍  4 Just Thrive Probiotic capsules

📍  1 teaspoon baking powder

📍  ½ teaspoon salt

📍  5 tablespoons honey or maple syrup

📍  1 teaspoon vanilla

 

Directions:

1. Preheat oven to 350 degrees
2. Add strawberries, juice from ½ a lemon, and 1 tablespoon of honey or maple syrup to a small saucepan over medium heat. The strawberries will take about five minutes to break down. You can break down the strawberries by stirring with a spoon or fork
3. Lower heat and mix in 1 tablespoon arrowroot powder to thicken the jam.
4. Set the jam aside and get a bowl to mix the ingredients for the crumble.
5. Add oats, almond flour, the powder from 4 Just Thrive probiotics, baking powder, salt, honey or maple syrup, and vanilla to the bowl and mix until thoroughly combined.
6. Press ⅔ of the crumble dough into a 8x8 baking pan lined with parchment paper
7. Spread a thick layer of the strawberry jam evenly over the dough then crumble the rest of the dough on top.
8. Bake strawberry crumble bars for about 20 minutes-the crumble will start to turn golden brown.
9. Let cool in the pan for about 10 minutes then remove the parchment paper from the pan and let cool before slicing.
10. Enjoy!

    If you manage not to eat all the strawberry crumble bars within 24 hours, the bars can be stored in the fridge or freezer.
