Strawberry Coconut Mini Tarts

I love to create simple, no-bake treats year round for my family and friends. I get asked often for easy recipes that can be whipped up in no time, and this is one of my favorites. 

These mini tarts are easy to make, require no baking (so you can enjoy them even faster) and can be assembled with just a few ingredients.  Plus they're perfect for parties or potlucks, baby showers or bridal showers, picnics or cook-outs.... Or if you're just looking for a new, healthy dessert to try (and love!)

This recipe features one of my absolute favorite flavor combinations: Strawberry and coconut! 

Strawberries are the most popular berries in the U.S.,  and for good reason! 

This tiny fruit is packed with nutrients, including antioxidants and vitamin C. They also contain fiber for digestion and flavonoids important for cardiovascular health. Strawberries are low calorie, low carb and by themselves, they make an excellent snack food or healthy dessert!

The health benefits of coconut are extraordinary. 

A mere 2 tablespoons of coconut oil provides an impressive 13 grams of healthy Omega-9 fatty acids. Additionally, they are rich in lauric acid, which has been shown to help keep you and your immune system healthy and strong!

Of course, one of the most exciting things about coconut is how it impacts weight management. It is a source of "healthy fat,"  which is required by your body to maintain a healthy metabolism and can help support your weight loss efforts.

To round out the deliciously amazing health benefits of this recipe, I've also added two of Just Thrive's most potent gut-health players: The Probiotic & Antioxidant and the Precision PREbiotic

The Probiotic ensures you'll be getting a nourishing boost of beneficial bacteria to keep you healthy and strong, but will not impact the flavor or texture (which is why I love adding it to just about all my recipes). I also added the PREbiotic for an extra dash of healthy sweetness, AND because it's the perfect fuel source for the healthy bacteria in the Probiotic for some next level gut love.  

This dessert is the absolute best way to treat you and those you love to a homemade, scrumptious dessert and sneak in some immune and digestive support power to keep everyone healthy and balanced. 

Strawberry Coconut Mini Tarts Recipe

Ingredients:

Crust:

  • 1 1/4 cup pecans
  • 1 cup soft dates
  • 1 scoop of Precision PREbiotic
  • 1 tsp of coconut oil
  • 1 Tbsp of flaxseeds (optional)

Filling:

  • 1 1/4 cup coconut yogurt
  • 4-6 strawberries, sliced
  • 2 capsules of Just Thrive Probiotic
  • Handful of cocoa nibs

Instructions:

  1. Mix the crust ingredients in a blender to form a dough consistency 
  2. Divide the mixture into 2 even portions 
  3. Press mixture down into mini tart molds or fashion into a small bowl. Set aside
  4. In a separate mixing bowl add 1 1/4 cup coconut yogurt 
  5. Open the capsules of Just Thrive Probiotic and mix with the yogurt
  6. Pour the yogurt mixture into the crust
  7. Decorate the tarts with slices of fresh strawberries and sprinkle on cocoa nibs
  8. Refrigerate for a few minutes, or eat right away.
