One-Pan Orange & Pomegranate Salmon with Asparagus

  1. Preheat your oven to 400°F. Line a baking sheet or roasting pan with parchment paper or foil.
  2. Prepare the glaze in a small saucepan. Whisk together orange juice, honey, soy sauce, garlic, Just Thrive Probiotic, and Dijon mustard. Simmer over medium heat for 5–7 minutes, until slightly reduced.
  3. Place the whole salmon fillet (skin side down) in the center of the prepared baking sheet/roasting pan. Arrange asparagus spears around it. Drizzle everything with olive oil and season with salt and pepper.
  4. Spoon about half the orange glaze over the salmon and a little over the asparagus.
  5. Roast for 15–18 minutes, depending on thickness, until salmon flakes easily with a fork and asparagus is tender.
  6. Brush or drizzle the rest of the glaze over the cooked salmon. Sprinkle with pomegranate seeds and fresh herbs right before serving.
