One-pan Lemon And Garlic Roasted Chicken

Cooking can be such a joy ESPECIALLY when it's easy to clean up afterwards. That's why I'm all about one-pan meals that let me whip up a nutritious dinner in no time, without the hassle of washing multiple pots and pans. 

One of my go-to ingredients when cooking any dish is lemon, not only for its delicious tangy taste but also for its numerous health benefits. Packed with vitamin C and antioxidants, lemons are known to support the immune system and aid in digestion. 

The combination of lemon and garlic is one of my absolute favorite flavor boosters, and in my Lemon Garlic Roasted Chicken dish, they take center stage. 

For the chicken – I prefer using boneless chicken thighs for a quicker cook time, and I always leave the skin on to add extra crunch and flavor.

I served this chicken with green beans, but you can pick any vegetable you’d like! If using fresh green beans, you may want to cook them prior by boiling, air frying or even putting in the microwave so they cook faster in the pan. We want to keep this meal as easy as possible!

One-pan Lemon And Garlic Roasted Chicken

Prep time: 5 minutes
Cook time: 25 minutes
Total time: 30 minutes

Servings: 4

Ingredients:

  • 2 tbsp olive oil
  • 1 tbsp butter
  • 4 boneless chicken thighs
  • 1 lb of pre-cooked green beans
  • 3 cloves of minced garlic
  • 1 tsp each of paprika and onion powder
  • Salt and pepper to taste
  • ¼ tsp crushed red pepper
  • Juice from ½ lemon or more if you’d like
  • ½ cup chicken stock
  • 2-3 capsules Just Thrive Probiotic

Directions:

  1. Season your chicken thighs with paprika, onion powder, salt and pepper.
  2. Heat 2 tbsp of olive oil in a large pan over medium heat. Add in the chicken and cook for 6 minutes on each side until fully cooked through. Transfer chicken to a plate and set aside.
  3. Melt 1 tbsp of butter in the same pan and add in the garlic, red pepper flakes and green beans. Cook for about 5 minutes until they are nice and roasted.
  4. Add in the lemon juice, Just Thrive Probiotic (open the capsules and dump the contents) and chicken stock. Simmer the sauce until it thickens.
  5. Add the chicken back into the pan to reheat the chicken. Serve and enjoy!
