Healthy Cranberry No-Bake Cheesecake

During the holiday season, I love to make special desserts that are healthy and easy to make. There is always something to celebrate, whether it be a holiday party, a Sunday brunch, or just dinner at a friend's house. 

Sometimes we just want to stay in too, yet make a yummy meal! This is one of those recipes that has the WOW factor. Not only is it absolutely delicious but it’s so colorful and just screams holidays, it’s perfect to whip up anytime!

One holiday dessert that I love is cheesecake! What I don’t love is the dairy that I am so sensitive to, so I made a vegan, dairy free option that is simply scrumptious.  

I also added in two of my favorite Just Thrive products, Just Thrive Probiotic and Just Calm. I sprinkle my Probiotic into something that I’m eating or drinking every day. It’s the easiest way to take my daily supplements and I love that the strains are so resilient that I can bake and cook with them.  

This time of year is a bit stressful for everyone with all the hustle and bustle so I decided to add in some Just Calm to help balance cortisol levels and help me sleep. This recipe is refined-sugar free, gluten free and vegan. However, you can use regular butter, cream cheese, graham crackers and whipped cream if you’d like. Either way, I’m sure it will be just as delicious and hope you enjoy it as much as we do. Happy Holidays!

Healthy Cranberry No Bake Cheesecake

Prep time: 25 minutes
Freeze time: 3 hours
Total time: 3 hours and 25 minutes
Course: dessert
Servings: 6-8 people

Crust Ingredients:

  • 2 ½ cups of sugar-free , gluten-free graham crackers 
  • 2 -3 Tbsp of melted vegan butter 

Cheesecake Layer Ingredients:

  • 1 package (about 1 cup) vegan cream cheese 
  • 1 capsule of Just Thrive Just Calm
  • 1 capsule of Just Thrive Probiotic
  • 2 cups of coconut whipped cream (sugar free if possible) 
  • 5 Tbsp of cranberry jam (home made or sugar free option) 
  • ¼ cup of cranberry jam for the last layer (or topping) 

Instructions:

  1. In a blender add the graham crackers and melted butter. Mix for a few seconds. 
  2. Pour into a cheesecake pan and press down with a glass cup or a silicone spatula. Set aside in the refrigerator while working on the cheesecake layer.
  3. In a bowl add the vegan cream cheese and 1 capsule of Just Thrive Probiotic
  4. Mix with a handheld mixer for a few minutes. 
  5. Add in the coconut whipped cream and mix again until fluffy. 
  6. Add the cranberry jam and mix for another 1 to 2 minutes. 
  7. Pour on top of the crust and set in the freezer for at least 3 hours. 
  8. Take it out of the freezer and sprinkle in Just Calm into the rest of your cranberry jam or cranberry sauce. 
  9. Spread another layer on top. Decorate with cranberries (dusted in coconut flour) and fresh rosemary!
