Winter is the perfect time to have a cozy night in with a home cooked meal. I love to cook with the flavors of the season, like rosemary, cranberry and maple. They blend well together and are not only delicious but comforting this time of year. I love cooking one pan meals for easy cleanup and this is so easy, yet oh so good!
One of my favorite Winter fruits to cook and bake with are cranberries. Cranberries are considered to be a superfood due to their antioxidant content and nutrients. Once they are cooked in this recipe, they are so soft and absolutely delicious.
Maple, dijon, olive oil and balsamic are one of my favorite flavor combinations. They’re easy on your system (supporting great digestion and a healthy you), and also make a great salad dressing that goes well with this dish.`
