Grilled Chicken Caprese

Because Labor Day weekend is on the horizon, now’s the perfect time to talk about GRILLING! 

This recipe is one of my absolute favorites. It’s super easy to make and absolutely delicious. Plus it looks like you put in a lot of effort to make, so whoever you’re cooking for will feel extra special. 

Adding in capsules of Just Thrive Probiotic to the marinade is a great way to get your daily dose of good gut bacteria without having to swallow a pill. Plus, it doesn’t affect the taste at all! The probiotic is odorless and tasteless which makes it the perfect recipe companion. 

Taking a daily Just Thrive Probiotic has so many benefits:

  • It keeps bad bacteria at bay and to help you stay healthy
  • It produces antioxidants at the point of maximum absorption

Chicken breast is an excellent source of lean protein and loaded with vitamins. I try to buy organic, grass fed, whenever possible. The marinade is loaded with balsamic and garlic that really packs this chicken with a lot of healthy flavor.

To make a great presentation for your guests, simply add all the chicken to a large platter and drizzle balsamic glaze over the top. Bonus points for sprinkling on some additional basil leaves.

But enough of the chit chat… Time to get grilling!

Grilled Chicken Caprese 

Ingredients:

  • 4 chicken breasts
  • ¼ cup olive oil 
  • ¼ cup balsamic vinegar 
  • 3 cloves crushed garlic
  • 1 tbsp Italian seasoning
  • 4 capsules of Just Thrive Probiotic
  • 4 slices of mozzarella cheese
  • 1 tomato sliced
  • Handful of basil leaves
  • Balsamic Glaze

Instructions: 

  1. Add your chicken, olive oil, balsamic vinegar, garlic, Italian seasoning and capsules of Just Thrive Probiotic to a bowl to marinate for at least 30 minutes. 
  2. Grill your chicken breasts for about 6 minutes and then flip.
  3. Once you have flipped them- add your mozzarella cheese, tomato slices and basil leaves and cook for an additional 5 minutes until cooked.
  4. Drizzle with balsamic glaze

NOTE: You can wait til the final presentation to sprinkle in the Just Thrive Probiotic if you’d like… but you don’t have to – it retains potency in super high heat, so either way you’re good!
