A Sweet, Gut-healthy Treat: Vegan Matcha Mango Panna-Cotta (recipe)

Panna cotta, a molded chilled dessert popular throughout Italy, is renowned for being as tasty as it is beautiful. But have you tried making Panna-Cotta at home?

It may look a bit daunting, but in actuality, it’s super easy to make! Even better, with my recipe below, you can make a healthy, vegan-friendly, gluten free, and gut healthy version the whole family can enjoy.  

Panna-cotta is, in my opinion, the perfect dessert to share and enjoy on a summer afternoon... Or keep it all to yourself to enjoy! (after all, this one is actually GOOD for you.)

Creating Your Vegan Matcha Mango Panna-Cotta

Ingredients:

📍  2 cups fresh or frozen mango

📍  cup coconut cream

📍  1/2 tsp agar agar powder

📍  6 drops of liquid monk fruit sugar replacement (or more if you desire )

📍  1 tbsp ceremonial matcha powder 

📍  1 tsp pure rose nectar

📍  2 capsules of Just Thrive Probiotic 

 

Tools:

>>   Blender

>>   Medium sized pot

>>   Panna cotta molds

 

Directions:

1. In a blender mix mangoes and coconut cream together. Blend for 2 to 3 minutes.
2. Transfer the mix to a pot, add agar agar and bring to a boil. 
3. Boil for 2-3 minutes. 
4. Take off heat and add the monk fruit sweetener, pure rose nectar and sprinkle in your two capsules of Just Thrive Probiotic. 
5. Mix everything together. 
6. Pour into panna cotta molds and let it sit on the counter for 20 minutes
7. Transfer to the refrigerator until it’s set and ready (about 1 to 2 hours)
8.  Enjoy with fresh blueberries on top and a mint 🍃
