Easing into summer with these delightfully gut healthy, oh so tasty strawberry popsicles. What more can you ask for then being able to nourish your body and soul at the same time?
These pops are made with creamy coconut milk for strong, and body loving fats; antioxidant and vitamin C rich strawberries. They’re one of the most simple, pure deserts, and sweetened with just a touch of maple, and they also take less than 15 minutes to make! It’s almost too good to be true!
But what makes these extra nourishing is the added pre and probiotics from Just Thrive.

Vegan Strawberry Cream Popsicles (Recipe)Makes 10 popsicles INGREDIENTS

HOW TO MAKE: Combine the coconut milk, maple syrup, vanilla and salt in a blender. Empty the Just Thrive Probiotic and Precision PREbiotic capsules into the mixture, and give it another whirl. For a single popsicle shade: Add the strawberries to the popsicle mixture and blend until combined. The mixture doesn’t need to be fully smooth – itty bitty strawberry chunks can be nice. Then pour the mixture into the popsicle molds, leaving 1/3 inch room at the top of each. For a variety of popsicle shades, ranging from pale pink to vibrant: Add 1/3 of the strawberries to the popsicle mixture and blend for 20 seconds, then pour the mixture into 2 – 3 popsicles, leaving approximately 1/3 inch room at the top of each. Add another 1/3 of the strawberries to the blender, blend to combine, then pour 2-3 more popsicles. Continue until you have used all the strawberries and popsicle mixture. Freeze the popsicles for 30 minutes. Meanwhile, combine your granola and rose petals. After 30 minutes of freezing, remove the popsicles and add the granola, gently pushing the granola into the mixture slightly so it freezes to the popsicle. Place the popsicle lid on top, and insert the popsicle sticks a little more than half way. Freeze for at least 4 hours. Enjoy! NOTES: Leaving the 1/3 of space to the top of the popsicle molds allows room for them to expand when frozen, and room to add granola if you like. If skipping the granola step, still allow the popsicles to freeze for 30 minutes before inserting the popsicle sticks so they don’t sink all the way in. Depending on your popsicle mold, and how well the lid holds the sticks in place, you may need to freeze them for an hour before inserting the sticks. If the lid works really well, partially freezing first may not be necessary at all. To remove the popsicles, allow them to defrost for 5-10 minutes, then gently pull them out. Extras can be stored in an airtight container with parchment between them, or compostable ziplocks bags. |
