Gluten-Free Pumpkin Cake with Maple Cream Cheese Frosting

Ingredients:

Cake:

Maple Cream Cheese Frosting:

  • 1/2 cup organic cream cheese, softened
  • 2 Tbsp grass-fed butter, softened
  • 2 Tbsp organic maple syrup
  • 1 cup homemade powdered coconut sugar (see below)
  • 1/2 tsp organic vanilla powder
  • Optional: crushed pecans, cinnamon, or extra pumpkin pie spice for topping

  1. Blend coconut sugar in a high-speed blender or food processor until fine.
  2. Add arrowroot powder, and pulse a few more times until fully combined.

Cake:

  1. Preheat your oven to 350°F (175°C). Grease an 8x8 square pan and line with parchment paper.
  2. In a bowl, mix wet ingredients: pumpkin puree, egg, coconut oil, and vanilla extract. Beat until smooth.
  3. In another bowl, mix dry ingredients: coconut sugar, ground vanilla powder, almond flour, cassava flour, Just Thrive Probiotic (contents from capsules), baking soda, sea salt, pumpkin pie spice, and cinnamon.
  4. Gently fold dry ingredients into wet until just combined. Optional: Fold in yogurt for extra softness.
  5. Pour batter into the prepared pan and smooth the top.
  6. Bake for 25–30 minutes (start checking at 25 min) until a toothpick inserted in the center comes out clean.
  7. Cool completely before frosting.

Maple Cream Cheese Frosting:

  1. Make your powdered coconut sugar if not already done.
  2. In a bowl, beat cream cheese and butter until smooth.
  3. Add maple syrup and vanilla powder. Mix until combined.
  4. Gradually add homemade powdered coconut sugar, beating until smooth and spreadable.

Assembly:

  1. Once the cake is completely cooled, spread frosting evenly over the top.
  2. Optional: Sprinkle with crushed pecans, cinnamon, or extra pumpkin pie spice.
    Slice into squares and enjoy!

Notes:

  1. If you don’t want to make your own powdered coconut sugar, you can use regular or monk fruit powdered sugar instead.
  2. For a dairy-free version, swap cream cheese and butter for plant-based options.
  3. You can use coconut yogurt instead of dairy yogurt if you prefer a dairy-free option. (Or leave it out.)
  4. This recipe is super adaptable; fold in chocolate chips, nuts, or a swirl of pumpkin butter for a fun twist.
  5. Using an 8x8 square pan gives nice edges that caramelize slightly, adding extra texture to the cake.
