Gut Healthy Twix Bars

What is better than a delicious dessert? A functional dessert with benefits. 

I love making re-makes of some of my childhood favorites, and Twix is definitely one of them. The gooey caramel center with the crisp cookie & chocolate - it really doesn’t get any better, except for now!

These gut healthy Twix are gluten free, dairy free & paleo friendly. Filled with Just Thrive’s incredible spore-based probiotic - meant to survive the journey to your gut. It also survives in up to 400 degrees of heat  Which makes it the perfect recipe companion to maintain optimum gut health!

But, one of my favorite natural prebiotics to cook with are dates! They are nature's candy and they always help to get things moving. They have a caramel like flavor so they make up the majority of the date caramel gooey center.

Gut Healthy Twix Bars

Prep: 20 mins
Cook: 10 mins
Freeze: A few hours 
Total: 4 hours
Course: Dessert

Servings: 15 large cups 

Ingredients

Shortbread Layer:

  • 3 cups sifted almond flour
  • 1 cup melted coconut oil
  • 1 tsp vanilla bean paste 
  • 2 Just Thrive Probiotic Capsules 

Date Caramel:

  • 10 large pitted dates (soaked in hot water for 10 minutes)
  • 1/4 cup coconut milk, cream, or yogurt
  • 2 heaping tbsp almond butter
  • 1 tsp vanilla bean paste or vanilla extract 
  • Pinch of salt

Chocolate:

  • 1 cup chocolate 
  • 2 tbsp coconut oil

Directions:

  1. Preheat oven to 350
  2. Mix everything together for shortbread layer, place in silicon molds
  3. Bake for 10-15 minutes until golden along edges 
  4. Let cool in freezer
  5. While cooling make date caramel in food processor 
  6. Top caramel in each cup 
  7. Let harden in freezer for a few hours
  8. Once hardened, melt chocolate & give each cup a lil bath 
  9. Top with flakey sea salt and place in freezer for 15-30 more minutes
  10. VOILA <3
