Gut-Healthy Cran N’ Coco Overnight Oats

We have busy mornings in my house. Between making breakfast, packing lunches and backpacks and trying to get everyone out the door, it has gotten crazy! To keep my sanity, I like to prepare breakfast the night before whenever possible. This way I know that one task is off my list in the morning and I ensure that we are eating a nutritious breakfast before starting our day. 

Of course, it’s hard to find anything quick and easy that’s not filled with preservatives and additives these days. That’s why I try to make as many homemade meals as possible to feed my family… But breakfast sometimes doesn’t fit in. This is one recipe that does and it’s so delicious.

Gut-Healthy Cran N' Coco Overnight Oats

Prep Time: 5-10 minutes

Cook Time: 2 hours or overnight

Diet: Vegan

Ingredients:

  • 1/2 cup oats (ideally gluten free)
  • 3/4 cup plant milk of choice (I like coconut)
  • 1 capsule of Just Thrive Probiotic
  • 1/3 cup unsweetened coconut yogurt
  • 2 tbsp of homemade cranberry jam (or use store bought)
  • Fresh cranberries coated in coconut flour for toppings!
  • 1 tsp of dried cranberry powder (optional)

Directions:

  1. In a jar add the oats, plant milk, cranberry powder (which is optional), open a capsule of Just Thrive Probiotic and mix well together!
  2. Top with coconut yogurt , cranberry sauce and fresh cranberries
  3. Set in the refrigerator overnight or up to 2 hours
