Gluten Free Cranberry Macadamia Nut Muffins

There’s nothing like cranberries! I love how festive and pretty they are, and I wanted to find a healthy recipe to incorporate more cranberries into my diet.

Cranberries are a powerhouse of antioxidants that can help with weight loss, combat tooth decay and even support immune function. (less “ahhhh-choo” and more “awwwwe-yeah!”)

If you enjoy having a few holiday cocktails, cranberries are also one of the best ways to maintain a healthy liver!

But there’s more than just cranberries - this dish also features nature’s kernel powerhouse: the macadamia nut. Macadamia nuts are also a great source of antioxidants! They are rich in monounsaturated fats that can help drive optimal heart health by lowering your total and LDL (bad) cholesterol levels.

Gluten Free Cranberry Macadamia Nut Muffins 

Ingredients:

  • 2 Cups Almond Flour
  • 2 Eggs
  • 2 Egg Whites, only
  • 1/4 cup Honey
  • 1 tsp Baking Soda
  • 1 Tbsp Apple Cider Vinegar
  • 1 tsp Vanilla Extract
  • 2 Tbsp Butter, or Coconut Oil
  • 3-4 capsules of Just Thrive Probiotic (open capsules, empty contents)
  • 1 Cup Fresh Cranberries
  • ½ Cup Chopped Macadamia Nuts 

Directions:

  1. Preheat over to 350 degrees
  2. In food processor, combine all ingredients except cranberries and macadamia nuts. Blend until smooth, about 30 seconds.
  3. Pour mixture into a bowl and fold in the cranberries and macadamia nuts
  4. Divide batter into 12 greased muffin tins and bake for 25 minutes.
