Vanilla Cinnamon Sugar Gingerbread Loaf

Gluten-Free, Refined Sugar-Free & Gut-Loving

Guest blog and recipe by Carolina @healthyliciousworld.

There’s something special about a loaf that fills your home with warmth before you’ve even sliced into it. This vanilla cinnamon sugar gingerbread loaf is that kind of recipe that meets you with the scent of cinnamon, molasses, and cozy sweetness the moment it hits the oven. It’s tender, soft, naturally sweetened, and made with ingredients that simply feel good in your body… the kind you can savor without second thoughts.

What we love most about this loaf is how inviting and doable it feels. No fancy equipment. No complicated steps. Just two simple bowls, a whisk, and a moment carved out to treat yourself to something warm, wholesome, and deeply comforting. The texture is soft and moist with a golden, delicate crumb that melts on your tongue. The flavors are gentle, warm, nostalgic — like the gingerbread you grew up with, but made with real ingredients that actually love you back.

And tucked inside all that goodness is the ingredient that makes this loaf truly special: Just Thrive’s spore-based probiotics. You can’t taste them, you’ll forget they’re even there, but your body absolutely won’t. They blend effortlessly into the batter and turn this simple loaf into a gut-loving ritual your body will thank you for.

If you’re craving something sweet but wholesome, nostalgic but nourishing, comforting but light…this is the loaf we hope you try next.

Directions

  1. Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. In a large bowl, whisk together the eggs, melted butter, molasses, maple syrup, and coconut sugar. Add the probiotics here.
  3. In a separate bowl, combine the almond flour, arrowroot powder, baking powder, baking soda, salt, vanilla powder, and all the spices.
  4. Gently fold the dry ingredients into the wet ingredients until fully combined, being careful not to over mix.
  5. Pour into your loaf pan and bake for 35–45 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool in the pan for 10–15 minutes.
  7. In a small bowl, combine the coconut sugar, cinnamon, and vanilla. Brush the warm loaf with melted butter, then evenly sprinkle the mixture on top. Gently press so it sticks, creating a lightly sweet, golden crust.
