Fall time and baked goods go together like Apple pie and America! The two just go hand and hand.
Growing up in a small town in the Sierra Mountains in Nevada, CA, I always equated the beautiful colors of fall with the sweet aromas of the harvest… Not to mention pies... And of course, my mom’s zucchini muffins!
Now, it’s quite possible you might be thinking to yourself, “Zucchini muffin?!?”
I assure you they are sweet, delicious, healthy (if you do it right), and very satisfying.
A Baker’s Gut Health Dilemma
I have always loved baking but…
For me, the older I get, the more and more I notice that baking and stomach unrest seem to go hand in hand. Oftentimes, the delicious treats I’m crafting seem to get outshined by the bloating and gas I experience afterwards.
Talk about a confectionary dilemma!
It started to dawn on me that the foods I loved – and more critically – the foods I identified with as part of my culture and family were the main culprits behind my gut issues.

Sweet Zucchini Muffins Powered by Just Thrive Probiotic

To reap the rewards of the Just Thrive Probiotic without impacting the flavor, aroma, or texture of this recipe, simply open up 1-2 capsules and add it to the bowl.
Unlike most probiotics on the market, you can add our probiotic strains to just about anything!!
- 1 1/4 Cup Spelt Flour
- 3/4 Cup Almond Flour
- 1 Chia seed “egg” (1 Tb Chia seeds + 2.5 Tb water & let sit before adding)
- 1 Tb Cinnamon
- 1/2 Tsp Pink Salt
- 1/2 Cup Maple Syrup
- 1/4 Cup Coconut oil, melted
- 1 1/4 finely shredded zucchini
- 1-2 Capsules of Just Thrive Probiotic
Optional add ins:
- 1 Tb Hemp Seeds
- 3/4 Cup raisins
1️⃣ Preheat oven to 350F
2️⃣ Line muffins tray with liners
3️⃣ In a bowl combine all ingredients
4️⃣ Fill muffins liners halfway
5️⃣ Bake for 20-25 minutes, test to make sure inside is baked all the way
6️⃣ Let cool & enjoy!
7️⃣ Wrap muffins and store for about 3 days at room temperature
