Lemon Vinaigrette Pasta Salad

The summer season has arrived, which brings graduation parties, outdoor birthday parties, barbecues and other celebrations. This Lemon Vinaigrette Orzo pasta salad is the perfect side dish for any event or outing! 

Its packed with summer veggies and the lemon dressing makes it so light and refreshing. This dish is served cold, making it super easy to make the day/night before. 

And confession time: I will be bringing this to all my BBQs this summer.

For my corn, tomatoes and cucumbers, I’m lucky enough to grow them all locally, right in my garden! Tomatoes have so many valuable health benefits and are great for your digestion, your immune system, your skin and your eyes.

Lemon Vinaigrette Pasta Salad Recipe

This recipe takes about 20 minutes to make. You can make it a day ahead and keep it in the fridge until ready to serve if you’d like:

Ingredients for the salad:

  • 1lb orzo – traditional or Gluten Free (my favorite GF version is this
  • 1 pint grape tomatoes cut in half
  • 1 cup diced cucumbers
  • 1 cup corn
  • ½ cup red onion
  • 2 TBSP chopped parsley

Ingredients for the dressing:

  • 1/3 cup olive oil
  • 3 TBSP lemon juice
  • 2 TBSP honey
  • 1 TBSP Dijon mustard
  • 2 cloves chopped garlic
  • 2 scoops of Precision PREbiotic drink mix
  • Salt and pepper to taste


  1. Start off by cooking your orzo according to the package directions.
  2. Add the cooked orzo, tomatoes, cucumbers, corn, onion and parsley in a large bowl.
  3. Combine all the dressing ingredients in a separate bowl and whisk together.
  4. Pour the dressing over the salad and stir it until well combined.
  5. Cover and set in the fridge until you are ready to serve.
