Golden Turmeric Cauliflower Potato Soup

Ingredients

Directions

  1. Preheat your oven to 400°F and line a baking sheet with parchment or foil.
  2. Spread cauliflower, potatoes, onion, and garlic on the sheet. Drizzle with oil, sprinkle with salt and pepper, and toss to coat.
  3. Roast 30–40 minutes, until potatoes and cauliflower are very tender and edges are lightly browned.
  4. Let the vegetables cool for 5–10 minutes, then add to a blender with 2 ½ cups of broth, turmeric, cumin, paprika, ginger, and honey/maple syrup if using.
  5. Blend until smooth and velvety, adding more broth to reach desired thickness.
