Southwestern Chicken Soup (Powered by Just Thrive)

I love a warm comfort meal this time of year, and this is a simple recipe that you can make that packs in a lot of nutrition and flavor. Of course, southwestern chicken soup is perfect anytime, but it’s ESPECIALLY wonderful when it’s cold outside.  

The winter months can be tough for a lot of people. The days are shorter, it's colder outside, and sometimes it feels like you're stuck inside all the time. This can lead to feelings of sadness, loneliness, or boredom.

That means that during the colder months, it’s more important than ever to manage your stress and support your best mood. 

When it comes to your mental and emotional health, science has shown that the bacteria living in your gut can really have a significant impact on your brain and mood. This makes so much sense because of the connection that exists between your brain and your gastrointestinal tract – It is called the Gut-Brain axis. 

This communication superhighway is bi-directional, meaning that it goes both ways. The brain can influence gut function, and the gut can also affect the mind.

Southwestern Chicken Soup (Powered by Just Thrive)


  • 2 tbsp. extra-virgin olive oil
  • 1 medium onion, chopped 
  • 1 jalapeno, seeds removed, minced
  • 4 cloves garlic, minced
  • 3 c. shredded cooked chicken
  • 1 can corn
  • 1 can black beans 
  • 2 capsules of Just Thrive Probiotic 
  • 2 capsules of Just Thrive Immunity Plus
  • Salt and pepper to taste
  • 1 tbsp. chili powder
  • 2 tsp. dried oregano 
  • 2 tsp. ground cumin 
  • 1 (28-oz.) can tomatoes with green chilis 
  • 4 c. low-sodium chicken broth 
  • 1 bay leaf
  • Juice of 1 lime


  1. In a large pot over medium heat, heat oil. Cook onion until soft about 5 minutes. 
  2. Add in the jalapeño and garlic and cook for a minute. 
  3. Stir in chicken and season with salt, pepper, chili powder, oregano and cumin. 
  4. Add the tomatoes and chicken broth. Stir to combine and add in the black beans, corn, lime juice, and bay leaf. Bring to a boil. 
  5. Reduce heat to low and let simmer until slightly reduced, about 15 minutes. 
  6. Sprinkle in your Probiotic and Immunity Plus and give it a good stir!
  7. Garnish the soup with jalapenos, lime and cilantro.
  8. Enjoy some good immune-nourishing soup!
