Mojo Pork Tenderloin With Apricot Glaze and Probiotics

Mojo sauce is all about balance. It's a blend of fresh citrus juice (usually orange, lime, or a combination of both), plenty of garlic, and a touch of herbs and spices. The acidity from the citrus tenderizes the pork, while the garlic and herbs infuse it with depth and complexity. After marinating for a few hours, the pork is ready to be seared to perfection.

The apricot glaze takes this dish to the next level. The glaze adds a glossy finish and a burst of flavor that complements the citrusy notes of the marinade.

Mojo Pork Tenderloin With Apricot Glaze

For the marinade:
For the glaze: Directions:
  1. Mix all the marinade ingredients together in a large bowl. Marinate your pork tenderloin for a minimum of four hours or overnight.
  2. Make your glaze by combining all of the ingredients.
  3. Sear each side of your pork on the stove.
  4. Brush the pork with your glaze, and bake at 350 F. Keep adding the glaze on your pork every 10 minutes until the internal temp reaches 145 F.
  5. Serve with more of the glaze for dipping!
  6. You can garnish the dish with wedges of lime and orange if you wish. Enjoy!
