Pumpkin Spice Protein Bark With Probiotics

Pumpkin spice season is officially here so what better way to kick it off than with a gut loving treat that not only tastes like fall but is packed with so many amazing health benefits?!

This recipe is simple, delicious, nourishing and about to be a staple all season long—you’ll see!

The best part is it’s so diverse. I made this version more of a dessert by turning it into a bark with dark chocolate drizzled on top, but you could also roll it into balls—just mix in chocolate chips after blending!

Before I show you how easy this recipe is, let’s highlight the health benefits:

  • Medjool dates: high in fiber + antioxidants. They’re also a great source of potassium!
  • Organic oats: also high in fiber + antioxidants. This grain is great for long lasting energy
  • Vanilla protein: helps build lean protein + helps keep you full for longer!

Pumpkin Spice Protein Bark With Probiotics

Prep time: 5 minutes
Cook time: 20 minutes (freeze time)
Total time: 25 minutes
Course: Healthy dessert, healthy snack
Diet: Gluten-free, dairy-free

Ingredients:

Directions:

  1. Add all ingredients to a food processor (minus chocolate + salt).
  2. Blend until dough-like consistency is reached. You may need to add a couple dashes of water if your batter is dry after blending. Start small, you can always add more!
  3. Flatten your dough out on parchment paper.
  4. Melt dark chocolate and add in some pumpkin pie spice if you’re feeling extra!
  5. Pour chocolate on dough and freeze until firm, top with flakey sea salt, cut into bites & enjoy!

Notes:

*If the dates aren’t juicy, soak them in hot water for 10 minutes.

Store leftovers (if you have any) in the fridge in an airtight container until you’re ready to enjoy.
