Magic Matcha Energy Bars

Sometimes, I wake up with vibrant energy, ready to take on the day and be productive, and I feel like an absolute rockstar. However - that is not always the case.

Maybe I had a late night the evening before or something else is going on, but we all have those days when you’re just in a funk. When your gut is not healthy, those days are much more common than not. Before I went on the journey of healing my gut, I was waking up with brain fog every day. I felt anxious and stressed, restless, bloated and in pain. 

This was before I knew that my immune system, mind, and body are all interconnected within my gut. Around 80% of your immune system lives in your gut and 95% of your serotonin (happiness hormone) is produced in your gut. Your brain and gut are directly connected, and the bacteria in your gut convert hormones that communicate with every part of your body.

I tried all types of probiotics - but my symptoms only seemed to get worse! HOW was that possible? This is when I dove into research mode. I found out that 99.9% of the probiotics on the market die in your stomach acid’s naturally low PH before they even get to your gut, and most of them are not free of histamines (which can cause allergic reactions in people with sensitivities). Instead of helping me, the bad bacteria were strengthened by feeding off the probiotics that were meant to help me.

One day while on one of my daily walks I stumbled upon a podcast about gut health (this is content I can listen to forever). It was featuring Tina Anderson, the founder of Just Thrive, and she was talking all about the difference between their spore-based probiotics and other conventional probiotics. No Bake, Gut-Healthy Magic Matcha Energy Bars

Ingredients:

  • 1 cup oat flour (blended oats)
  • 1 tablespoon maca powder 
  • 1 tablespoon hemp seeds
  • 1 teaspoon cinnamon 
  • 4 teaspoons matcha 
  • 2 tablespoons collagen powder 
  • JUST THRIVE PROBIOTIC (I used two capsules, just open and pour out the powder, it is flavorless and odorless and makes for the perfect probiotic boost for anyone, especially if you don’t like swallowing pills)
  • 5 large dates
  • 2 tablespoons coconut oil
  • 2 teaspoons vanilla
  • 2 tablespoons almond butter 
  • 2 tablespoons water

Instructions:

  1. Line a baking dish or tin with parchment paper
  2. Place all ingredients in a large mixing bowl, and stir until you have a ball of “dough.” (can also blend in a food processor)
  3. Wet your hands and press the mixture evenly into the baking dish, forming it into a flat, even shape (about 1/2 inch thick)
  4. Freeze for 1 to 2 hours
  5. Slice and enjoy!

Notes:

To make your own oat flour: Get some old-fashioned, organic, gluten-free oats and grind them in a blender or food processor until you get a fine powder.
