Dreamy Roasted Butternut Squash Soup

Butternut squash soup is the ideal comfort food. This recipe just screams fall to me! I love to make this after a day of raking some leaves or picking pumpkins!

FUN FACT- Butternut squash is technically a fruit! It is also loaded with vitamins, minerals, fiber and antioxidants.

I’m always trying to find ways to get more magnesium into my diet. My absolute favorite benefit of butternut squash is that it’s high in magnesium! And, one cup of cooked butternut squash has only 83 calories and 7 grams of fiber! That means it’s quite possibly the perfect dish to help maintain a healthy weight.

Dreamy Roasted Butternut Squash Soup

INGREDIENTS:

  • 1 butternut squash (about 3 pounds), peeled, seeded and cut in 1-inch chunks
  • 1 onion, diced
  • 1 red bell pepper, chopped
  • 2 tablespoons olive oil
  • 2 cloves garlic, chopped
  • Salt and pepper to taste
  • 1/2 teaspoon dried thyme
  • 2 1/2 cups chicken stock (can use vegetable stock make it Vegan)
  • 2 tablespoons chopped chives
  • 2-3 capsules of Just Thrive Probiotic

DIRECTIONS:

  1. Preheat oven to 400 degrees.
  2. Place butternut squash, onion, pepper and garlic on to a baking sheet. Drizzle over some olive oil, salt and pepper and toss to combine. Arrange into a single layer onto the baking sheet.
  3. Place into oven and bake for 25-30 minutes, or until butternut squash is tender, stirring halfway.
  4. Heat a large stockpot or Dutch oven over medium heat. Add butternut squash mixture and thyme, and cook, stirring occasionally, until fragrant, about 1-2 minutes; season with salt and pepper, to taste. Stir in chicken stock and puree with an immersion blender.
  5. Bring to a boil; reduce heat and simmer until slightly thickened, about 5-10 minutes. If the soup is too thick, add more chicken stock as needed until desired consistency is reached.
  6. Open capsules and stir in your desired amount of Just Thrive Probiotic
  7. Garnish with some chives and enjoy!
