Dark Chocolate Gut Nourishing Blueberry Bars

Dark Chocolate Gut Nourishing Blueberry Bars

Directions:

  1. Preheat the oven to 350 F.
  2. Combine the frozen blueberries and arrowroot starch in a bowl and toss to combine. Set aside.
  3. In another bowl, mix together the coconut flour, coconut flakes, baking soda, sea salt, coconut sugar, and the contents of your Just Thrive Probiotic. Use a whisk and your hand to mix and make sure there are no clumps. Then add the coconut oil and mix until combined. It will be like a sticky paste, or like wet sand.
  4. Line an 8x8 cake pan or glass baking dish with parchment paper. Set aside ½ cup of crust mix and place the rest of it in an even layer on the bottom of the pan or dish. Pro tip: wet your hands so the crust doesn’t stick to them. The layer will be about ¼ inch thick. It may feel too thin - that’s ok! It will all come together in the end.
  5. Place the pan or dish on a baking sheet and then place the crust in the oven and let it bake for about 10 minutes or until slightly browned. Pro tip: Put a baking sheet under the pan so that the crust bakes evenly without burning.
  6. Pull it out of the oven and sprinkle your chocolate even over top of the crust. Put it back in the oven for a minute to let the chocolate melt, and then pull it back out. Use a spatula to smooth out the melted chocolate across the crust in an even layer.
  7. Add your blueberries in an even layer, and then sprinkle the remaining crust that you had set aside over top of the blueberries.
  8. Place the bars back in the oven for 10-15 minutes, or until set. If your oven is too hot, turn it down to 325F for the remainder of the cooking time.
  9. While the bars are baking, make your vegan white chocolate drizzle. Pro tip: It’s imperative that you chop the cacao butter into small pieces so that it melts quickly.
  10. To make the chocolate drizzle, use a double boiler. Here is how: heat up a small pot with about 1 inch of water. Once boiling, turn it off and place a metal or glass bowl over top, making sure the bowl is bigger than the pot so it traps the steam inside. 
  11. Place your cacao butter, milk, maple syrup, vanilla and salt into the bowl and stir until it’s all melted together (this could take 5-10 minutes, depending on the size of your cacao butter pieces). Set it aside and let it cool down in the fridge for about 5-10 minutes.
  12. Pull out your bars from the oven and let them cool. I tend to let them cool at room temp for about 10 minutes, and then I put them in the freezer for about 10 minutes to set.
  13. Pull out the drizzle from the fridge and open up the contents of your Just Calm. Stir to combine.
  14. Drizzle the white chocolate drizzle liberally over your cold bars and put them in the fridge to store and set.

These will keep in the fridge for a few weeks, and in the freezer for up to 6 months! Just be sure to store them airtight.
