Butterfly Pea Mango “Microbiome Boosting” Ice Cream Bars

Summer is my favorite season because I can make ice cream everyday 😁

And yes – if it’s healthy you can eat it every single day!  

The problem with most ice creams on the market is that they are filled with sugar! Like… so much sugar. If you read labels, ice creams at your local grocery stores contain between 14 and 24% sugar by weight.  

WOW!  

Sugar wreaks havoc on our gut and immune system, and when we overindulge, it can cause inflammation and an array of health conditions.  

But for many of us, summer and sugar go hand in hand… Thankfully, consistent, daily support of your gut can go a long way when we eat a little too much of this, or a little too much of that. In fact, studies are showing that getting your microbiome back in balance can help your body:

  • Stop, slow, or reverse disease progression
  • Protect precious insulin-producing cells
  • Use insulin more effectively
  • Manage blood sugar levels
  • Avoid intense sugar spikes and dips
  • And even maintain a healthy weight

But what does this have to do with ice cream bars?  

If you want to really enjoy this delicious, summertime treat without the added sugars… And get a healthy dose of great gut support… Skip the grocery store shelves and make some ice cream bars yourself!

Butterfly Pea Mango “Microbiome Boosting” Ice Cream Bars

Ingredients:

☀️ 7 oz coconut-milk (the thick part from a can)

☀️ 1 1/2 cups fresh or frozen mango

☀️ 1 tbsp grape nectar sweetener (very low in sugar)

☀️ 2 capsules Just Thrive Probiotic (open capsules)

☀️ 1 tsp butterfly pea powder

☀️ Juice of 1/2 lemon 🍋

Instructions:

  1. Mix coconut milk, mango, Probiotic (open the caps, dump the contents), and grape nectar in a blender start low and switch to high speed.
  2. Pour half of the mix into an ice-cream mold – In the pics, I’ve used a mold with 4 bars)
  3. In the other half, add butterfly pea powder and lemon. 
  4. Blend again and pour in mold again.
  5. Decorate with your favorite toppings (like edible flowers), freeze and enjoy 😉
