Banana Oat Breakfast Bars (Powered by Just Thrive Probiotic)

Guest recipe and blog by Ligia / @ligiasfreshbowls

Life is busy! If you’re anything like me, you’re always looking for a quick breakfast or quick snack that’s healthy yet delicious. I have the perfect solution and it’s not only naturally healthy, but great for your gut health too.

These gut-healthy banana oat breakfast bars are made up of simple, wholesome ingredients and have a great balance of carbohydrates, proteins and fats. They are also super satisfying and will keep you satiated for hours, making them a great way to start the day or the perfect before/after workout snack. Plus, they pack and travel well for those long car rides or family bike rides, hikes or picnics.

Oats are an incredibly nutritious food packed with important vitamins, minerals and antioxidants. In addition, they're high in fiber and protein compared to other grains. And to make it super healthy I’ve added a superstar blast of Probiotic from Just Thrive.

And yes – You CAN bake with Just Thrive Probiotic (which is why I add their gut health goodness to just about every recipe). Even better – just one daily cap from Just Thrive Probiotic can keep your gut healthy and balanced.

Here’s the recipe for your new favorite quick breakfast or after workout snack! 😍

Banana Oat Breakfast Bars (Powered by Just Thrive Probiotic)

Ingredients:

  • 3 ripe bananas
  • 1/2 cup nut or seed butter of your choice
  • 1 flax egg (1 Tbsp flax seeds + 2 Tbsp water, let it sit for 5 minutes)
  • 1 capsule of Just Thrive Probiotic (open cap, empty contents)
  • 1 cup gluten-free rolled oats
  • 3/4 cup gluten-free quick oats
  • 1 Tbsp of maple syrup (optional)
  • 1/3 cup dried fruits (I like raisins and unsweetened dried cherries)

Instructions:

  1. After flax egg has had time to sit, mix all ingredients in a single bowl
  2. Press mixture down in a baking dish.
  3. Bake @ 360 F for 20 minutes.
  4. Add chocolate chips when done baking (optional)

To store:

Stack the bars in an airtight container, with parchment paper in between so they don’t stick. They will last up to one week in the fridge and several months in the freezer. You can also double or triple the recipe so they are always on hand in the freezer.

I hope you love them as much as I do!

Enjoy 😊

Love, Ligia
