Does anything say, “hey, it’s fall!” more than pumpkins and apples? In my humble opinion, anything pumpkin flavored is always in season, and apples are arguably a staple all year round. But there is something even more comforting about those flavors when the September equinox comes around. It’s almost like you can feel the weather turning and the sweaters begging to be worn.
As a kid, I remember coming home from school during the fall and before I even walked in the door, I could smell the apple muffins my mother was baking wafting from the kitchen. She would pull them out of the oven as we set down our backpacks and raced toward the intoxicating smell of freshly baked muffins. We’d devour them while they were still warm as our after school snack.
With this recipe, I have combined this flavorful memory with my other seasonal favorite: pumpkin. But instead of muffins, I turned it into a loaf because it’s much easier. With a loaf, all you have to do is dump the batter into a prepared baking pan, stick it in the oven, and walk away until it’s done.
I infused this pumpkin apple loaf with gut-friendly probiotics so that all the kids in the house - the littlest ones and the biggest ones alike (aka the parents) - can feel even better about eating this comfort food.
