Directions:

  1. If your dates are firm, soak them in hot water for 15–20 minutes. Drain well. Add all base ingredients to a food processor, and blend until a sticky dough forms. If needed, add a touch of water or more almond butter.
  2. Roll into balls and place them on a parchment-lined tray. Freeze while preparing the chocolate coating.
  3. Melt chocolate chips and coconut oil together in 30-second intervals, stirring until smooth.
  4. Dip each ball into the chocolate and return to the tray. Sprinkle with sea salt if you’d like.
  5. Freeze for 5–10 minutes to set.
  6. Store in the fridge or freezer and enjoy!
