Tiny Pumpkin Muffins

Thanksgiving is right around the corner which means it’s the end of pumpkin treats and on to peppermint, cranberry, and holiday fun. BUT… not just yet! I’ve got one more pumpkin recipe for you, that’s light, tasty, and super versatile, just in time for the last minute Thanksgiving rush.

While I love having a muffin for breakfast, they can sometimes leave you feeling heavy in the stomach.

But not these tiny pumpkin muffins!

They are light, fluffy and incredibly delicious. Their small size is still packed with fall flavor without leaving you feeling sluggish after. And of course, they’re tiny size also makes them great for kids!

While these muffins are perfect on their own for a simple, sweet treat, they’re also easy to dress up with your favorite Thanksgiving decorative touches. Show off your icing skills, add some fall-colored sprinkles, whatever your heart desires!

Tiny Pumpkin Muffins

Prep Time: 15 minutes
Bake Time: 15 minutes
Total Time: 30 minutes
Servings: 24 mini muffins
Diet: Gluten-Free
Course: Snack, breakfast, dessert

Ingredients:

Directions:

  1. Preheat the oven to 375 degrees F.
  2. Grease a mini muffin pan with nonstick spray.
  3. Add the sugars into a bowl and pour the melted butter over.
  4. Mix until combined, then add in the eggs and vanilla extract.
  5. Lastly, add the can of pumpkin puree to the wet ingredients, and mix until fully combined.
  6. Next, fold in the dry ingredients.
  7. For the Just Thrive Probiotic capsules, open and add the contents in with the other dry ingredients.
  8. Mix gently until just combined.
  9. Using a 1 inch scooper, transfer the batter into the greased mini muffin pan.
  10. Bake for 15–17 minutes or until a toothpick comes out of the center clean.
  11. Let cool and enjoy!

Storage Instructions:

Store the muffins in an airtight container at room temperature for up to two days or in the fridge for four days. (Optional: Reheat in the microwave for 10-15 seconds to enjoy muffins warm!)
