Sweet Potatoes Stuffed with Maple Dijon Chickpeas

Ingredients:

  1. Rub olive oil on the outside of your sweet potatoes. Season with salt and pepper. Roast at 425 F for about an hour.
  2. Heat your pan on medium heat. Add the olive oil and cook the onions until translucent. Add in the garbanzo beans. Toast those for a few minutes. Add in all the seasonings and the powder from the Just Thrive Probiotic capsules.
  3. Add in the cranberries, pecans, maple syrup, and Dijon mustard. Stir until combined. Add more olive oil if necessary.
