A good apple harvest salad is one of my favorite ways to capture everything I love about this time of year: sweet, savory, crunchy, and comforting.

Apples are at their peak in the fall, bursting with flavor and natural sweetness. Pairing them with hearty greens, toasted nuts, and a touch of cheese creates a perfect balance of textures and tastes. It’s light enough for lunch yet special enough for a holiday table spread.

Calming Apple Harvest Salad

Ingredients:

Dressing:

Salad:

  • 1 Apple sliced
  • 1/4 red onion sliced
  • 1/2 cup pecans
  • 1/2 cup dried cranberries
  • Goat cheese to taste
  • Arugula/mixed greens

Directions:

  1. Combine all the ingredients for the dressing. I like to use a mason jar so I can shake it to mix easily.
  2. Add the arugula to a large bowl. Top with your apple slices, red onion, pecans, dried cranberries, and goat cheese.
  3. Drizzle on your delicious maple vinaigrette dressing. It’s that simple—yet delicious!
