Probiotic Peppermint Dark Chocolate Truffles

Probiotic Peppermint Dark Chocolate Truffles

Prep time: 5 minutes
Total time: 30 minutes

Servings: 14–16 truffles


Garnishes (to coat the truffles with):


  1. Heat the coconut milk until hot but not boiling (you can do this in a microwave or over the stove). Set aside.
  2. Heat an inch of water in a small pot over high heat until boiling. Once boiling, turn off the heat. Place a metal bowl over top of the pot such that it covers the pot completely.
  3. Place the chocolate, hot coconut milk, and the powder from inside the Just Thrive Probiotic capsule into the bowl and stir continuously until the chocolate and milk melt together (this could take about 5–10 minutes).
  4. Once melted, add in the vanilla and peppermint and place the bowl in the fridge for about 5–10 minutes, or until the chocolate is firm but malleable enough to roll into balls.
  5. Place your desired garnishes (cacao nibs, cacao powder, candy canes) into separate bowls.
  6. Spoon out the firm chocolate with a tablespoon and roll it into a ball. Dip the chocolate truffle into your desired garnish and place on a plate. Do this for the remainder of the chocolate mixture until you’re done.
  7. Serve immediately. Store the remaining truffles at room temperature in an airtight container for up to 3 days
