Looking for an easy weeknight dinner without too many steps? Mushroom and spinach pasta is the perfect meatless meal. It’s made with simple ingredients and is a perfect comfort meal for a cold night. It’s also very easy to make after a busy day.
You can use fresh spinach or frozen spinach—whatever you have on hand. Spinach contains many different vitamins and minerals which makes it the perfect veggie to incorporate into your diet wherever you can. It also helps promote a healthy digestive tract.
Another option you have is using fresh mushrooms, canned, or even frozen. The choice is yours! Mushrooms contain nutrients our bodies need to function well.
I added Just Thrive Probiotic as it helps keep my gut microbiome in healthy balance and allows the good bacteria to grow and thrive. This supplement is also non-GMO (i.e. made without any genetically modified organisms)!
**While gluten-free pasta is recommended, you can always sub with your noodles of choice.
