Mushroom and Spinach Pasta

Looking for an easy weeknight dinner without too many steps? Mushroom and spinach pasta is the perfect meatless meal. It’s made with simple ingredients and is a perfect comfort meal for a cold night. It’s also very easy to make after a busy day.

You can use fresh spinach or frozen spinach—whatever you have on hand. Spinach contains many different vitamins and minerals which makes it the perfect veggie to incorporate into your diet wherever you can. It also helps promote a healthy digestive tract.

Another option you have is using fresh mushrooms, canned, or even frozen. The choice is yours! Mushrooms contain nutrients our bodies need to function well.

Mushroom and Spinach Pasta

Prep time: 5 minutes
Cook time: 30 minutes
Total time: 35 minutes

  1. Cook pasta until al dente.
  2. Add 2 tbsp of olive oil to a hot skillet. Add in the mushrooms, and cook until soft.
  3. Add in the garlic, and cook for a minute. Careful not to let it burn.
  4. Pour in the broth, and add the spinach. Cook until wilted.
  5. Add in your seasonings and contents of the Just Thrive Probiotic capsules.
  6. Add the pasta into the skillet.
  7. Add in the parmesan cheese and the remainder of the olive oil. Stir to combine.
  8. Garnish with more parmesan and chili flakes. Add more olive oil if needed.
