Healthy Pumpkin Chocolate Fudge

It’s pumpkin season, and all the fall treats are coming back on the menu! While pumpkin desserts are delicious, they aren’t always the most nutritious!

That’s why I created this Healthy Pumpkin Chocolate Fudge, made with good-for-you ingredients.

This no-bake dessert recipe has quickly become a staple in our household. The fudge is rich and indulgent in every bite. If you like chocolate and pumpkin together, this recipe is perfect for you!

Nutritional Benefits

  • Tahini: Tahini is highly nutritious and rich in antioxidants. May also reduce heart disease and inflammation.
  • Dark Chocolate: Contains antioxidants and is considered a “superfood”. It has fiber, iron, magnesium, potassium, and zinc.
  • Pumpkin Puree: Low in calories and rich in antioxidants as well as vitamins and minerals.
  • Maple Syrup: A healthier sugar alternative that also contains important vitamins and minerals, particularly manganese. It also has a low glycemic index.
  • Coconut Oil: May help reduce hunger, improve oral health, and boost skin health.

Healthy Pumpkin Chocolate Fudge

Prep Time: 15 minutes
Chill Time: 3–4 hours
Total Time: 3 hours 15 minutes
Servings: 16 squares
Diet: Gluten-free and vegan
Course: Snack, dessert

Ingredients:

Base Pumpkin Layer

Chocolate Layer

Directions:

  1. Line a square 8x8 baking pan with parchment paper.
  2. In a large mixing bowl, combine the plain tahini, maple syrup, pumpkin puree, coconut oil, and contents of Just Thrive Probiotic capsules.
  3. Mix until combined and a smooth texture.
  4. In a bowl, melt the chocolate chips at 30 second increments (mixing in between).
  5. Once there are only a few clumps of chocolate left, stop and mix to melt the chocolate chips with the residual heat.
  6. Add the chocolate tahini to the melted chocolate.
  7. Mix until smooth.
  8. Pour the pumpkin tahini mixture into the baking pan lined with parchment paper.
  9. Smooth into an even layer.
  10. Pour the chocolate tahini mixture on top.
  11. Smooth into an even layer.
  12. Use a spoon to swirl the layers together
  13. Put in the fridge to set for 4 hours.
  14. Once set, slice into 16 bars and enjoy.

Storage Instructions:

Store in an airtight container in the fridge for up to 7 days, or freeze for up to 2 months.
