Healthy Copycat No-Bake, Gut-Healthy Cosmic Brownie Bars

No-bake cosmic brownies are one of my favorite treats to make. They’re easy, gluten-free, dairy-free, and grain-free. The base is made with Just Thrive PREbiotic (so you can show your gut a little love) and topped with chocolate ganache icing and rainbow-colored chocolates. They’re dense, chewy, and honestly better than the originals!

These no-bake cosmic brownie bars are not only tasty but also give your good gut bacteria the fuel they need to thrive.

Healthy Copycat No-Bake, Gut-Healthy Cosmic Brownie Bars

Prep time: 30 minutes
Cook time: 1 hour
Total time: 1 hour 30 minutes
Course: dessert
Diet: gluten, dairy, and grain-fee
Servings: 8–16

Brownie Layer Ingredients:
Chocolate Ganache:
Directions:
  1. Add the ingredients for the brownie layer into a food processor or blender and blend until smooth.
  2. Transfer the mixture to a baking dish and flatten.
  3. Let the base chill in the fridge for 15–30 minutes.
  4. Make the chocolate ganache, then pour it over the base and let it sit for about an hour or until firm.
  5. Add some sprinkles and chocolate bits on top.
