Cranberry Gut-Nourishing Pork Chops

Easy dinner for two?! Pork chops with a cranberry shallot sauce is the perfect date night meal this month! It’s a quick and easy meal to throw together and can be served with side dishes of your choice.

Cranberries are a great source of nutrients such as vitamins, fiber, minerals, and antioxidants. They can also help relax muscle cramps.

Shallots are helpful for relieving allergy symptoms and can help fight colds, fevers, and coughs. They can also help lower stress levels, so I need all the shallots I can get, along with my favorite stress-busting supplement, Just Calm!

I added capsules of Just Thrive Probiotic to the shallot sauce to get my daily dose of probiotic. I’m not a big fan of swallowing my pills whole, so I love sneaking it into my meals.

I do add butter to the shallot sauce, but you can totally skip that step to make this completely dairy free, or even use a vegan butter! It’s an easy, delicious, gut-licious meal for any day of the week! Enjoy!

Cranberry Gut-Nourishing Pork Chops

Prep time: 10 minutes
Cook time: 20 minutes
Total time: 30 minutes

Ingredients:

Directions:

  1. Season pork with salt, pepper, and garlic powder.
  2. Coat the pork with a thin layer of flour until both sides are covered.
  3. Drizzle olive oil in your pan on medium high heat and add your pork chops. Cook for about five minutes each side until cooked through.
  4. Remove the pork chops from the pan and set aside.
  5. Add another drizzle of olive oil in the same pan and reduce the heat to medium low.
  6. Cook the shallots until lightly browned for about 5 minutes.
  7. Add in your capsules of Just Thrive Probiotic, cranberries, chicken stock concentrate, water, and butter. Cook until the sauce has thickened. Regularly stirring.
  8. Add salt and pepper as desired.
  9. Add the pork chops back to the pan and cover with the sauce.
  10. Serve this meal with your favorite roasted veggies or a nice salad!
