Healthy Chai Cookies

Nothing says it’s the winter season quite like some cozy baking! So change into something comfy, light a candle, and let’s make some healthy chai cookies!

Think—crumble cookie vibes but packed with gut loving ingredients that will leave you feeling nourished from the inside out.

I seriously cannot get over how amazing these are!

Here’s how easy they are to make…

Healthy Chai Cookies

Prep time: 5 minutes
Cook time: 15 minutes
Total time: 20 minutes
Course: Breakfast, dessert, snack
Diet: Gluten-free

Cookie Ingredients:

Frosting Ingredients:

  • 1/4 c coconut yogurt
  • 1 tbsp protein powder
  • Chai spice for topping

Note: I used Cocojune yogurt and Truvani Plant-Based Protein (in pumpkin spice flavor) for this recipe because the flavors marry really well. You can always use greek yogurt and a vanilla flavored powder if you want as well! The ratios may be a little different but play around with it until you get a nice frosting consistency. I love making protein frosting because they taste amazing, add a little protein to the mix, and help with overall blood sugar balance!

Directions:

  • Mix maple syrup, coconut oil, egg, coconut sugar, and contents of probiotic capsules.
  • Add in the dry ingredients and mix again.
  • Let dough chill in the fridge for 10 minutes.*
  • Transfer dough to a lined baking sheet, and bake at 375 F for 15 minutes.
  • While the cookies are baking, make the frosting.
  • Top cookies with frosting and a little chai spice.
  • Cozy up and enjoy!

*Don’t skip this step! Letting the dough chill in the fridge thickens it up. This is when I clean up my mess and make myself a cozy cup of coffee or tea!
