Gnocchi With Cherry Tomato Sauce

Guest recipe and blog by Emily Hill @wonderwhyimfat.

This time of year I always have an abundance of tomatoes in my garden. I am adding them to just about everything we eat. But, there is nothing more delicious than a fresh, homemade tomato sauce! I always felt like making my own sauce from scratch was intimidating, but it’s actually very simple! You just need some patience to let the tomatoes cook down, and add in the herbs and spices to taste.

This is the perfect way to use some of my basil in my garden as well! If you don’t already have an herb garden, I would suggest it! It saves you a lot of money too and is a fun hobby. It’s super easy to grow your own vegetables and herbs and perfect for making sure you have the freshest ingredients on hand—essential when you cook as much as I do. Plus, less trips to the grocery store!

This recipe has only a few simple ingredients and is the ultimate comfort food. I love that it's all cooked in one pan which makes for easy cleanup. It’s the perfect weeknight meal with the hustle and bustle of work, carpools, or whatever your weeknights entail.

Tomatoes are a nutrient dense superfood full of vitamins, like vitamin A, C, and K, potassium, and folate. They are also rich in Lycopene, which is an antioxidant linked to reduced risk of chronic diseases and certain cancers.

Tomatoes are not only delicious, but they are heart healthy and the vitamin A in them is essential for eye health and reducing the risk of age-related macular degeneration.

So grab those tomatoes, and add them into your favorite recipes to contribute to your overall health and well-being.

I also like to sneak in Just Thrive Probiotic to our daily recipes. It’s so much easier than putting all the capsules out for my family each day. (Although, we LOVE the new probiotic gummies!)

Adding in some capsules of Just Thrive Probiotic does not affect the taste of any recipe, but will give you all the benefits of taking your daily probiotic in the most delicious way. Let’s get cooking!
