Gluten-Free Zucchini Muffins

Prep Time: 10 minutes
Bake Time: 20 minutes
Total Time: 30 minutes
Servings: 12 muffins
Diet: Gluten-free, dairy-free (use milk and butter swaps)
Course: Breakfast, dessert, or snack
  
Ingredients:

Directions:

  1. Preheat the oven to 425 degrees F.
  2. In a large mixing bowl add in all of your wet ingredients.
  3. Mix until fully combined.
  4. Fold in the gluten-free flour along with the cinnamon, baking soda, baking powder, and contents of the Just Thrive Probiotic capsules.
  5. Mix until just combined.
  6. Scoop the batter into a muffin pan. See FAQ sections for tips on muffins that are fluffy and rise high.
  7. Add optional toppings.
  8. Bake in the oven for 10 minutes, then reduce the temperature to 350 degrees F.
  9. Continue to bake the muffins for an additional 10–12 minutes or until a toothpick comes out of the center clean.
  10. Let cool for about 10 minutes and enjoy!

Storage Instructions:

Store in an airtight container at room temperature for up to 5 days or in the freezer for up to 1 month.
