Sweet Potato Muffins (With Prebiotics!)

Who would have thought that chocolate + sweet potatoes would actually be a good mix? Plus, they’re great for your gut health thanks to a Just Thrive PREbiotic, and they’re gluten and dairy-free. Check out the recipe!

Sweet Potato Muffins

Prep time: 15 minutes
Cook time: 25-30 minutes
Total time: 45 minutes

Muffin Directions:

  1. Preheat oven to 375 F.
  2. Combine the gluten free flour, baking powder, cinnamon, monk fruit sweetener, and sweet potato powder into a large bowl. Whisk together until well mixed.
  3. In a separate bowl, mix the eggs, olive oil, Just Thrive PREbiotic, vanilla extract, and flax milk.
  4. Combine the wet mixture into the flour mixture. Add the batter to a muffin pan.
  5. Bake the muffins for 25–30 minutes or until fully baked.
  6. Cool for 10 minutes.

Cream Cheese Frosting Directions:

  1. Melt 1 bar of chocolate over medium heat on the stove (careful not to burn).
  2. Add in the cacao powder, cream cheese, monk fruit, vanilla extract, and flax milk.
  3. Scrape down the sides as needed and continue to mix until smooth and creamy.
  4. Top the muffins with the chocolate cream cheese frosting, and dunk them in some cacao nibs and sprinkles of choice! Enjoy!
