No-Bake Chocolate Chip Oat Bars

I am always making easy, no-bake treats throughout the year to satisfy my sweet tooth. However, I prefer to make recipes that don’t require a lot of effort. Something I can whip up and take to a get together or serve to family and friends.

These no-bake chocolate chip oat bars are the perfect sweet treat that you could enjoy as a healthy dessert or sweet breakfast to start your day. They are easy to whip up as a quick breakfast to eat on the go or for a perfect nutritional treat when the kids, or you, come home from school or work.

Nutritional Benefits

  • Tahini: Tahini is toasted sesame seeds grounded down to a paste. It acts as an antioxidant and may help lower inflammation in the body. Sesame seeds have more phytosterols than other nut/seed butters which have shown to help lower cholesterol.
  • Peanut butter: Contains healthy fats and a little bit of protein along with B vitamins and vitamin E.
  • Maple syrup: Maple syrup is a healthier alternative to processed sugar. It contains numerous antioxidants as well as zinc, potassium, and calcium.
  • Dark chocolate: Contains antioxidants and is considered a “superfood”. It has fiber, iron, magnesium, potassium, and zinc.

No-Bake Chocolate Chip Oat Bars

Prep time: 10 minutes
Chill time: 90 minutes
Total time: 1 hour 40 minutes
Servings: 16
Diet: Gluten-free
Course: Breakfast, snack, or dessert

Ingredients:

Directions:

  1. Line an 8x8 square baking pan with parchment paper
  2. In a large mixing bowl, add the rolled oats.
  3. Pour in the peanut butter, tahini, maple syrup, and vanilla extract, and mix until combined.
  4. Open the Just Thrive Probiotic capsules, add the powder to the mixture, and mix again until combined.
  5. Fold in the dark chocolate chips, and mix until evenly distributed throughout the oat batter.
  6. Transfer to the 8x8 pan, and flatten using the back of a spoon, spatula, or offset spatula.
  7. Let sit in the fridge for 90–120 minutes to set.
  8. Remove from the fridge and slice into 16 pieces.

Storage Instructions:

Store in an airtight container in the fridge for up to 5 days. (Optional: Prior to eating let the bar sit at room temperature for 15–20 minutes.)
