Low-Carb Blueberry Probiotic Pancakes

Are you a pancake person like me? They make a sweet breakfast treat, or even a tasty evening dessert! I love them no matter what time of day! Sometimes the boxed recipes are filled with additives that are bad for the gut and not necessary, so I created my own.

Low-Carb Blueberry Probiotic Pancakes

Prep time: 5 minutes
Cook time: 5-8 minutes 
Total time: 10-15 minutes
Course: Breakfast (or a late night dessert)
Diet: Gluten & dairy-free
Servings: 1

Ingredients:

Directions:

  1. In a mixing bowl, whisk together the almond flour, salt, eggs, monk fruit maple syrup, and water until a smooth batter remains.
  2. Grease a large non-stick pan or skillet and place it over medium heat. Once hot, drop large spoonfuls of the batter onto the pan and immediately cover it.
  3. Add the blueberries. Cook the pancakes for 3-4 minutes, or until the edges begin to bubble.
  4. Remove the lid, carefully flip the pancakes, and cook for another 1-2 minutes, covered. Repeat the process until all the batter has been cooked.
  5. Serve the pancakes with your favorite toppings like fresh fruit, butter, more maple syrup, whipped cream, etc…and ENJOY!
