Gut-Friendly Grilled Peach Caprese Chicken

It’s summer fruit season! There’s nothing better than going to the farmers market and coming up with an easy healthy meal for dinner. I love this caprese peach chicken recipe because I can prep it in the morning, and when it’s time for dinner, all I have to do is throw it on the grill. This is a low effort, high reward dinner!

It gets boring going to a barbecue where all they serve are hotdogs and hamburgers. Yes, we love the classics, but it’s time to mix it up. This caprese peach chicken dish will impress your guests at your next BBQ.

You’ll want your grill to be around 350–400° when cooking. I like to add the cheese once I flip the chicken to give it time to get nice and melty.

Directions:

  1. Marinate your chicken breast in olive oil, balsamic vinegar, Italian seasoning, contents of Just Thrive Probiotic capsules, and garlic. You can do this overnight or 30 minutes before.
  2. Place your sliced peaches on some tinfoil on top of the grill. Cook until soft.
  3. Grill your chicken on one side for about 6 minutes. Once you flip the chicken, top with mozzarella cheese.
  4. Once the chicken has finished cooking, garnish with basil, peach slices, and balsamic glaze.
