Grandma Mitzi's Tomato Soup

Brrr… Did you know that January is known to be the coldest month in the Northern Hemisphere? It’s definitely getting cold here in Chicago, and for my family, that can only mean one thing – Time for some warm, comforting, creamy soup! 

Soup is the perfect meal for the winter weather – Not only is it easy to make, and great for warming things up on a cold day, but it can also be packed with important ingredients that support immune health. No matter what soup I’m making, one of my favorite things to do is add in some nourishing gut health goodness with Just Thrive Probiotic. And it’s also why soup has become a near-universal go-to for everyone when they’re trying to get better or stay healthy.

Unfortunately, canned soups are not the best option as most are filled with additives and preservatives… Not to mention crazy high amounts of sodium. I try to make homemade soups whenever possible during the Winter. I’ll make a few extra batches just to keep in the refrigerator for a quick, comforting meal at any time. 

My husband Billy is especially fond of one soup in particular that’s been passed down in his family from generation to generation. In fact, one of his favorite childhood memories is sitting in his Grandma's Mitzi’s kitsch and chowing down on her homemade tomato soup. The recipe is surprisingly easy to make and an absolute treat for your taste buds.

Grandma Mitzi’s Homemade Tomato Soup

Servings: 8-12 
Prep time: 10 minutes
Cook time: 30 minutes
Total time: 40 minutes
Course: Any

Ingredients:

  • Tomato juice, 64 fl oz. (I use this one)
  • 2 small onions (chopped fine)
  • 4-5 large ribs of celery (chopped fine)
  • Dairy free half and half – to taste (add as little or as much as you want… I use this one)
  • Chicken bouillon- 2-3 Tbsp (I use these)
  • 1 stick of butter
  • 2 hefty Tbsp of all-purpose Gluten Free flour

Directions:

  1. In a large pot over medium heat, cook onion and celery until soft. About 5-8 minutes.
  2. Pour in the tomato juice and equal amount water (use the same container)
  3. Add chicken bouillon
  4. Make a roux (thickening sauce) with the butter and Gluten Free flour in a saucepan on medium heat. Mix together and stir until it starts to thicken.
  5. Add roux to soup pot slowly and stir.
  6. Reduce heat to low and let simmer for about 15 minutes.
  7. Turn off heat and add in half and half
  8. Sprinkle in your Just Thrive Probiotic, Ultimate IgG, and Immunity Plus
  9. Enjoy homemade, gut and immune nourishing tomato soup!

NOTE: We like a good gluten free, Vegan grilled cheese to go with it over here! Or you can add in your favorite gluten free noodle to make it heartier.
