Easy Weeknight Beef Ravioli

Beef Ravioli with Butter Roasted Tomato Sauce

Prep time: 10 minutes
Cook time: 45 minutes

  1. Preheat the oven to 375°F.
  2. Combine the butter, tomatoes and thyme sprigs in a baking dish in a single layer. Add salt, pepper, and red pepper flakes (if using).
  3. Roast for 10 minutes. Remove from the oven and stir to fully coat the tomatoes in the butter.
  4. Return to the oven for 20–25 minutes.
  5. While the tomatoes roast, cook the ravioli. Reserve ½ cup of the cooking water.
  6. Remove tomatoes from the oven, discard thyme sprigs, and stir in the garlic spread.
  7. Heat the olive oil in a large skillet. Add roughly a third of the tomatoes to the skillet, then pour off the tomato juices from the baking dish.
  8. Add ¼ cup of the reserved cooking water and cook, stirring for 4–5 minutes.
  9. Slide the cooked ravioli into the pan, stir to coat, and simmer for about 3–4 minutes.
  10. Sprinkle the parmesan on top, stir to gently combine.
  11. Transfer the sauced ravioli to a serving dish.
  12. Spoon the remaining tomatoes on top of the ravioli.
  13. Garnish with chopped fresh basil. Mix the probiotic with the remaining tomato juices from the pan and drizzle over the serving.
