I love to bake, and I love to eat healthy baked goods, but...
Baking can sometimes be a little too involved, with lists of ingredients that require precise portioning, tireless mixing, and complicated combining.
And on weekends when I’m craving some baked goodness, but feeling a little a bit lazy, I much prefer things that are super simple.
If you’ve ever tried making a coconut yogurt tart at home before, you know that simple is typically NOT par for the course.
But, in my recipe below, I’m rewriting the coconut tart manual… And making it easy and healthy!
2 Ingredients, That’s All You’ll Need.
To make a healthy and delicious (and vegan) coconut yogurt at home you need only 2 ingredients:
👉 Full-fat coconut milk
👉 A proven probiotic
Of course, my go-to gut health superhero is Just Thrive Probiotic.
I’ve tried many different brands, and these strains are hands down my favorite.

Do Probiotics Mix Well With Any Recipe?
The short answer is:

Coconut Yogurt Tart Recipe, Powered by Just Thrive Probiotic
COCONUT YOGURT:
Ingredients:
📍 1 can coconut milk
📍 1 capsule of Just Thrive Probiotic (open capsule, and sprinkle into coconut milk)
That’s it!
Prepping the yogurt is a simple, 3-step process:
- Empty coconut milk into a clean glass jar or bowl
- Open up a Just Thrive Probiotic and stir the contents into your jar
- Cover and wait (12-18 hours)
It doesn’t get any easier than this. And the result is amazing!
Note: After all is prepared, I put the yogurt in a safe place – on the counter or in the oven ( but the oven has to be off ) . After 12 hours you can place the jar in the fridge and enjoy 👌
Pro Tip: It’s important that you choose a reputable coconut milk brand for best results. Whole Foods 365 brand works well. Also, it contains guar gum, which may help create a smooth texture and prevent separation.
VEGAN TART SHELL:
Ingredients:
📍 1 cup pecans
📍 3/4 cup dates
📍 1 tbs water
To create the tart shell:
- Mix all in a blender and blend completely
- Spread the blend into tart molds
To create the full coconut yogurt tart:
- Pour coconut yogurt into the tarts shells
- Top with fresh blueberries
- Enjoy!
