If you have been looking for the perfect summer pasta recipe, this one's for you. This charred lemon pasta is a mouth-wateringly delicious and easy recipe. I made this pasta for 4 of my friends, and we all could not believe how incredible the charred lemons were in this dish. I sent them all a fair warning that I was going to be using a probiotic in this recipe, and the feedback I got on how good they felt after dinner was enough to convince me to always add a probiotic to my pasta sauces!
My pasta of choice in this recipe was brown rice and quinoa pasta for some added fiber. Did you know that our gut microbiome loves fiber? All of the little microbes in our gut feed on that fiber, so by including fiber in our diet we are feeding the good bacteria and helping our gut run more smoothly! This dish also includes scallops which are a great source of omega-3 fatty acids.
The best part of this recipe is that it can be eaten straight away hot or can be stored in the fridge for about 5–7 days and is arguably better cold! I would recommend cooking the scallops each time you serve or trying this with some different proteins such as chicken, turkey meatballs, or salmon. You could even make this recipe plant-based easily by omitting the scallops or subbing with your favorite plant-based protein (such as king oyster mushrooms).
