  1. Add almonds to a food processor. Pulse in short bursts 8–10 times until a coarse meal forms. Do not run continuously.
  2. Add shredded coconut and pulse 2–3 times to combine.
  3. Add dates, almond butter, honey/maple syrup, lemon zest, lemon juice, collagen (if using), sea salt, and probiotic powder.

  5. Press mixture firmly into a parchment-lined small loaf pan.
