Maple Dijon Roasted Carrots

With Easter right around the corner, I thought I’d put a spin on the vegetable of the holiday, carrots! I wanted to create a delicious carrot side dish that’s both simple and satisfying. This one-pan recipe makes cleanup easy and can even be prepped ahead of time. I used colorful carrots for a vibrant presentation, but any variety will work just as well.

Carrots are often associated with supporting weight management—and for good reason. Just one cup is packed with nutrients that can help keep you feeling full longer. Ingredients

Directions

  1. Preheat oven to 400 degrees.
  2. Clean your carrots. Cut to your desired length. I like to leave them whole.
  3. Add all the remaining ingredients in a small bowl and stir to combine.
  4. Pour half of the maple sauce all over your carrots and cook for 20 minutes.
  5. Flip the carrots over and cook for another 10–20 minutes until soft. Add more sauce if needed.
  6. Once the carrots are cooked, cover with the remaining sauce and enjoy!
