Dill Cucumber Smash Salad

Ingredients

For the cucumbers:

  • 2 lbs Persian or English cucumbers (about 6–8 Persian or 2 English)
  • 1 tsp kosher salt

  1. Prep the cucumbers. Trim the ends off your cucumbers. Place them on a cutting board and use the flat side of a chef's knife or the bottom of a sturdy glass to smash each cucumber, press firmly until it cracks open and splits along its length. You want it broken open with some texture remaining, not flat. Cut the smashed cucumbers into 2-inch irregular chunks and place in a colander set over a bowl.
  2. Salt and drain. Toss the cucumber chunks with 1 tsp kosher salt. Let them sit for 10 minutes. This draws out excess water so your salad stays crisp instead of soupy. After 10 minutes, rinse briefly under cold water, then pat very dry with a clean kitchen towel or paper towels. Press out as much moisture as you can. This step matters.
  3. Make the probiotic dressing. In a large mixing bowl, whisk together the rice vinegar, sesame oil, olive oil, honey, and garlic.   • Cucumber choice matters: Persian cucumbers are crunchier, have fewer seeds, and they hold their texture better after the salt-and-drain step. English cucumbers work well too, just pat them especially dry after salting.
