Ingredients

Homemade Dressing

Salad

  • 1 cup black beans
  • 2 tbsp crumbled feta cheese (for vegan/dairy free, omit or sub vegan feta cheese)
  • ¼ cup diced red bell pepper
  • ½ cup sliced cucumber
  • ½ cup cherry tomatoes, halved
  • 6–8 whole Kalamata olives
  • 1½ cups chopped romaine lettuce

Directions

  1. Whisk the olive oil, herbs, salt, and pepper together. Open the probiotic capsule and sprinkle it into the dressing, mixing gently.
  2. Divide the dressing between the two jars (bottom of jars).
  3. Layer each jar with the salad ingredients with the lettuce at the top (to keep it from getting soggy).
  4. Seal the jars and refrigerate. When ready to eat, simply shake the jar to coat everything with the dressing.
